After baking my pizza cupcakes, I had a few leftover spring roll sheets in the fridge and since they come frozen, these sheets stay fresh longer. But I kept thinking, can I use these to make desserts?
Now many of us love how crispy, pillowy, and soft baked desserts taste when we use filo pastry. So I decided to experiment with some fruits at home and try baking spring rolls with delectable caramelized apples and sliced bananas!
Today, I will share that recipe so you can try this delicious dessert at home. Let us begin!
How Are Spring Roll Sheets Different From Filo Pastry Sheets?
When raving about baking sweet and savory dishes, filo pastry sheets come to mind. Their crispy, crumbly, and ultra-flaky finish is perfect for Baklava, patties, pies, etc.
Spring roll sheets, on the other hand, are crunchy, crisp, and paper-thin. They do not flake easily and are not as delicate as filo pastry. The only similarity is that both these pastry sheets make great appetizer dishes, both savory and heavenly sweet ones.
Their solid outer layers post-baking allow for the creamy, fluffy, and yummy fillings to be the main stars of the dishes.
As for my recipe, I prefer spring roll sheets because they add the much-needed crunch factor I crave in my baked spring rolls! They make the rich caramelized fruits taste like a slice of heaven.
Any Vegan Alternatives to the Ingredients?
My recipe has two non-vegan components:
- Milk butter
- Egg
And I wish to share their vegan alternatives so all my readers can enjoy this oven-baked spring rolls recipe!
As for butter, my mother and I came across sunflower seed butter a year back. They taste good and are perfect for cooking your apples!
Since many suffer from nut allergies, including some close ones, I prefer not to use nut butter for any of my recipes. But if you are safe, try almond butter because they are delicious!
As for the eggs, I use the whisked mixture to brush over the spring rolls before baking them. The result is a golden-brown and flaky coating that goes so beautifully with the soft filling inside!
Instead of this egg wash, you can use some olive oil to achieve a similar golden-brown finish.
A Quick Recipe for My Baked Banana Spring Rolls With Caramelized Apples!
Step 1: Dice Your Apples
Start by peeling two apples and dicing them into fine chunks. Make sure you de-seed your apples before dicing them.
To prevent your apples from browning, prep the apples right before caramelizing them.
Step 2: Add Some Butter and Sugar to the Pan
Put your flame/induction to low heat and add three tablespoons of unmelted butter. Now move your pan around a bit so that the butter coats the surface.
Within a few seconds, add your granulated sugar and mix it around so that the melted butter fuses with the sugar particles.
Step 3: Add Water to the Pan
Once the butter and sugar have blended in, add about a splash of water and crank up the heat to medium-high. Stir the mixture for a while, and wait for the water, sugar, and butter to bubble up.
Step 4: Add Your Apples to Cook Them
Once the mixture starts to bubble, lower the heat and throw in your diced apples. Use a spatula to sautee the apples for about eight to 10 minutes, stirring in between.
Now raise the heat to medium-high and sprinkle in some cinnamon powder if you like. Continue sauteeing the apple chunks till they turn tender and golden brown.
Step 5: Prep Your Banana
Use a kitchen knife to chop two peeled robusta bananas. You can halve these discs so they form smaller chunks that are easy to spread!
Cut your bananas right before adding them to the spring roll sheets. That way, they do not brown before you use them.
Step 6: Stack Two Spring Roll Sheets
Now prepare your baked spring rolls! Take two spring roll sheets and stack them. You will need more sheets, so put a fresh wet cloth over the rest to secure their moisture levels.
Brush some oil over the sheet with a spatula or your fingers. Doing this traps the moisture of these sheets so you can work over them.
Step 7: Add the Fillings!
Use a tablespoon to put caramelized apples and sliced bananas on the sheets. Spread them out so that they cover near a side of the sheets, making it easier to wrap the dessert without anything spilling over.
Step 8: Wrap the Sheet Over Fillings
First, preheat your microwave oven for five minutes at 180°C (356°F). Now take two ends of the sheet farther from the filling, and cover the apple and banana chunks. Up next, take the opposite ends and wrap them over.
Once the filling is fully covered, brush your egg wash within the sides to seal the wrap. Turn it over so that you can brush oil and whisked egg on the surface for that crispy, toasty, golden-brown finish.
You can brush the entire spring roll casing with oil and egg wash so it has a consistent crunch all over the surface.
Step 9: Bake Your Spring Rolls!
Grease a microwave oven-safe pan, and place your spring rolls. Now put this in the microwave oven for 15 minutes at 190°C (374°F.) The speed at which these spring rolls bake depends on the oven’s quality.
So if you have a high-end oven, yours might take 13 minutes! After the oven beeps, let the rolls rest inside for two minutes before taking them out.
They should have a perfect crispy, golden-brown finish with a crunchy surface that looks too good to eat.
Step 10 (Optional): Decorate the Rolls!
This is an optional step. If you want to dig into the baked banana spring rolls as they are, I heartfully encourage you!
But if you love to sprinkle some culinary creativity, bring out the chocolates! I like to drizzle some chocolate syrup on top and shave a bit of white chocolate over for a contrasting look.
If you have some extra powdered sugar around, sprinkle it over the roll and behold the beauty! You can also cut up some fresh fruits to garnish the plate. I had strawberries, so added them for some colors.
Now enjoy a spoonful of crunchy and chewy spring roll wrap, followed by a creamy, gooey, and flavorfully tarty fruit concoction, and ending with a smooth chocolaty finish. The caramelized apples add a sharp taste to each mouthful, while the creamy baked bananas soothe your mouth with a silky sweet finish.

- 0.13 Pound Granulated white sugar
- 1 Unit Egg
- 4 Units Spring roll sheets
- 4 Tbsps Oil (You can choose any oil)
- 1 Pinch Cinnamon powder
- 1 cube White chocolate chunk (For grating over the baked banana spring roll)
- 6 Tbsps Chococlate sauce (For drizzling)
Dice two apples into small chunks
Put your non-stick pan on low heat, and add butter and sugar
Mix the ingredients well and add a splash of water on medium high heat
When you have a perfectly bubbling blend, lower the heat. Now add the apple chunks
Crank up the heat again to medium high and add a pinch of cinnamon powder.
Stir and sautee the apples to coat them in the sweet sauce for about 8-10 minutes
When the water has evaporated, and your apples look tender and golden brown, take it off the heat
Peel and dice two robusta bananas
Pre-heat your oven for 5 minutes at 180°C (356°F)
Stack two spring roll sheets over one another
Brush some oil over the top sheet
Add in the caramelized apples and banana slices near a side
Wrap the spring roll sheets
Seal the sheets' sides using egg wash and turn it around
Brush some oil and egg wash over the spring rolls' surfaces
Put them on the oven-safe pan, and into the microwave to bake for 15 minutes at 190°C (374°F)
Let the rolls rest for a while and take them out
(Optional) Drizzle some chocolate sauce, white chocolate shavings, and powedered sugar over the rolls. You can add some sliced fruit on the side for added colors
