PIZZA! And now that I have your attention, let us talk about pizza, the best-ever distraction known to us.
When you enter a room carrying pizza boxes in your arms, all eyes will immediately fall on you. These discs, decked with gooey cheese, sweet marinara sauce, and chunks of tender meat and vegetables, are perfect for all types of gatherings.
You can start an hour-long conversation by just uttering the phrase, “World’s largest pizza!” with strangers at a meet.
And since they are such popular conversation starters at parties, I want to share a quick and easy mini pizza cupcakes recipe with you!
These take about 45 mins to an hour to prep and bake and are delicious little pockets of flavor explosions for your mouth!
Delivered vs. Homemade Pizza: Which Do I Pick?
Ordering pizzas online for home delivery is a beautiful feeling. But sometimes, I wish to mash up my favorite childhood snacks into one little wonder bite, i.e., pizza cupcakes!
I love cupcakes and pizzas, so a little bit of both never disappoints.
And that is why if I have close friends over, I like baking or cooking little finger foods that everyone can enjoy. Most of our gatherings are for LAN parties (yes, we still do that now for nostalgia’s sake,) board games, or mini trading cards tourneys.
I love how these meets are always a nice peek at our childhood, a time when we wished we could have met like these more often! But as adults, fortunately, we can make up for lost time with good games and dream foods!
So while the adult me would love to order large pizzas for meets, the child in my mind craves fun and silly foods. And pizza cupcake is something I can bake beforehand or make alongside my friends, so it is a fun pre-game group activity!
Aluminum vs. Silicone Cupcake Mold
I have both aluminum and silicone molds for cupcakes and muffins. For this recipe, I prefer the sturdy aluminum sheet tins over their bendable silicone counterparts for a specific reason: shapes. Both aluminum and silicone cupcake molds hold classic ridges on the sides. The only difference is that I choose silicone molds for batter-related recipes, while the aluminum molds go perfectly with sheet bases.
I use spring roll sheets for my pizza cupcakes. To shape them into cupcake-like bases, I use my fingers to push the bases in and slowly shape the sheets against the solid ridges. But if I tried the same manual shaping inside silicone molds, they would keep moving and eventually form a lump of dough that lost its texture.
A Quick Tip for Crispy Golden-Brown Edges
Spring roll sheets form a sturdy base for these pizza cupcakes. On baking, they are chewy, crunchy, and super flavourful from absorbing all the sauces and cheeses.
But if you want to add a little more pizzazz to your pizza, brush some oil on the edges between the spring roll sheets. After you bake these, the edges will have a crispy golden-brown finish that are delights to bite into!
For this, I use regular or olive oil, but if you have some leftover oil from frying garlic, use it on the spring roll sheets for an extra flavor kick!
Recipe for My Delicious Homemade Pizza Cupcakes
While I love to tinker around with the ingredients for my pizza cupcakes, this recipe has the basic components that fit best. Of course, you can add more elements and substitute my fillings for your favorites.
Now let us begin!
Step 1: Chop up the Green Peppers and Salami
Take a green pepper and scoop the seeds and extra bits out. When it is clean, you can start by julienning thin slices. Up next, chop up these thin slices, and you are done!
As for the salami pieces, you can stack them up and fine-dice them into smaller bits. Tinier the salami bits, the juicier they get upon baking.
Next, put these two ingredients in individual bowls and prep your other components.
Step 2: Prepare Your Pizza Ingredients
A regular pizza needs two components:
- A sauce
- Some cheese
Now you might prefer one of them or none of them, and that is alright!
But if you love mixing the relishing sweetness from the marinara sauce to the savory bites of melted cheese, then start prepping!
Shred some mozzarella cheese in a bowl to store it at a cold temperature. That way, the shreds will not gloop together.
For the sauce, I love marinara, but you can go for some sweet chili sauce for the kick! One suggestion, ensure that your sauce is not watery, or else it might make the pizza base soggy.
So if you use bottled marinara sauce like me, shake the container vigorously before using the contents!
Now, crack an egg in a bowl and whisk it till the yolk blends in with the whites. This liquid is crucial to hold your spring roll sheets together as they bake.
And as for the garnish, you can use some dried mixed herbs over the baked pizza cupcakes.
Step 3: Grease Your Cupcake Tin
Use a silicone brush to grease your aluminum cupcake tins sparingly. There is no need to use excessive oil. Brushing a little inside the molds will keep the spring roll sheet from sticking.
If you accidentally use too much oil, tip the cups over your oil bowl so that the excess liquid drips out.
Now place these cupcake molds on a microwave-safe pan and prep your pizza sheets!
Step 4: Stack Your Spring Roll Sheets
Stack up three spring roll sheets over one another to make a thick base. Now, I use flour spring roll pastry sheets that hold up well after baking.
If you want thinner sheets that crisp up nicely, I suggest using dumpling wrappers. Try getting the square pastry sheets, as they make pointy and crunchy edges.
After taking three sheets from the original spring roll pastry stack, cover it with a fresh and wet towel to ensure no moisture escapes.
Step 5: Cut the Sheets Into Squares
Use a kitchen knife to score out four squares on your spring roll pastry stack. Once they are visible, cut out the four squares and separate them.
You are so close to making your pizza cupcakes’ bases!
Step 6: Apply Some Whisked Egg Over One Square
Use your clean silicone brush to apply whisked egg over one of the squares. It helps to paste another sheet stack on top and keep it in place. Of course, you do not need to brush the entire sheet with egg mix; only the center is what counts!
Step 7: Now to Make a Flower!
Take another sheet square and place it over the first one. Except, try to angle its corners over the first square’s sides.
The result will be a cute flower-like stacked spring roll sheet, ready for your pizza ingredients!
Step 8: Line Your Pizza Sheets on Cupcake Molds
Hold two opposite edges of the first spring pastry sheets and place the full bases into the aluminum molds. Now use your fingertips to push the sheets down gently and press the sides against the cupcake ridge so that they form a sturdy shape.
And as you flatten the base and shape the sides of the cupcake tin, make sure you leave no bottom area uncovered inside the mold.
Step 9: Add Marinara and Cheese
Use a spoon to spread some marinara sauce inside the pizza cupcake bases. I like to drop one tablespoon of sauce so that I can slather it inside!
As for cheese, add as much as you desire. For me, a tablespoon of cheese does the trick, as I love a gooey, sweet, and savory center for the pizza cupcakes.
Step 10: Add the Remaining Ingredients!
Before prepping your pizza cupcakes, pre-heat your microwave oven to 180°C (356°F) for 5 minutes.
Add the green peppers and salami to the cheese and marinara sauce. For a more robust flavor profile, mix and toss the salami cubes in the marinara sauce before putting them in the base.
I like to sprinkle in some more shredded mozzarella cheese on top because cheese is yummilicious!
Step 11: Bake Your Pizza Cupcakes
Once your microwave oven is preheated, place the pan with the cupcake molds inside, and bake for 15 minutes at 190°C (374°F.)
After 15 minutes, let the pan rest inside the oven for another 2 minutes, which helps enrich that divine flavor and crispiness!

Pre-heat your oven for 5 minutes at 180°C (356°F)

Shred mozzerella cheese for the pizza cupcakes
Brush your alimunum cupcake molds with olive oil
Stack three spring roll sheets
Cut them into four squares using a kitchen knife
Whisk some eggs and brush the mix over the center of one square stack
Place a second square on the first one, at a side angle
Line your completed pizza bases on the cupcake molds
Add marinara sauce and cheese
Put the green peppers and salami pieces over the sauce and cheese
Sprinkle some extra cheese shreddings over the meat and veggies
Place the molds on a microwave oven-safe pan
Put this in the oven and bake for 15 minutes at 190°C (374°F)
Take it out after 15 minutes and sprinkle some mixed herbs to enjoy!
