After a whole day of work and games, the first few things I crave in the evening are a plate of chewy egg frittata and a cup of green tea. I have a love-and-hate relationship with eggs, but this egg frittata recipe is my favorite flavor bomb!
Now for those wondering, egg frittata is an Italian dish. It is different from a regular omelet in various ways, like how you prep them, the extra ingredients, or how hungry you are.
Omelets are light, while frittatas are fluffy, oozing with cheese and julienned veggies. I love sprinkling in some herbs for that snappy flavor in each bite.
Now I agree that frittatas need more prep and cooking time than omelets. But this dish has versatile flavors and allows you to play with ingredients. For example, if you do not like salami on your frittata, try out some fresh pancetta or chorizo bits to spice up the dish!
Can I Make an Omelette With a Frittata Recipe?
The Frittata mixture is thick from being whisked well. So if I use the same mixture for an omelet, it will turn out heavy, soggy, and not as light as I would like it to be.
The way I whisk my frittata blend, it has a creamy thickness. And due to this, frittatas need cooking on both sides, unlike an omelet. Since omelets have a more watery consistency, cooking them on one side will prep it.
Frittata cooks slowly. You must keep the heat low and consistent to help the dish cook all the way through. Omelettes, on the other hand, need high heat and cook faster.
Since eggs are my go-to ingredient for the sake of some daily protein intake, I rely on this recipe to keep me healthy, satiated, and happy before bed.
I can add any ingredient I want, as long as it is cohesive to the recipe! There is nothing more exciting than cooking something this yummy for your snacky needs.
Why I Add Oats to Frittata
So other than the eggs and veggies, I have another ingredient to make this dish healthier. I toast some instant oats to add to the prep. Instant oats make me feel full for longer, so I do not reach out for more snacks before dinner.
It also makes me feel more energetic instead of sleepy, even after having something so heavy! And since oats are jam-packed with dietary fibers, I never have any indigestion issues after a plate of this hearty meal.
Recipe for My Egg and Salami Frittata
My salami and egg recipe is a delight to prep and cook. I like to add carrots and cabbages to my frittata, but you can use whichever veggies you prefer for your dish!
Step 1: Prep Your Veggies
Wash your veggies well and pat them dry using a kitchen towel. Once they are ready, start chopping! I first chop my carrots into small chunks for those nice crunchy bits.
I also throw in a handful of peas for my veggie mix because it adds this burst of juicy flavor when cooked. And since this is an all-year dish in my home, I have no problem relying on frozen peas when it is not winter!
Up next, I chop up my cabbage into tiny bits that cook faster to complete my vegetable prepping.
Step 2: Whisk Your Eggs Vigorously
Crack two eggs in a bowl and whisk them vigorously. Remember that this is not an omelet recipe where you can lightly whisk your eggs. For this recipe, your eggs need a liquid-creamy texture.
If you do not have an electric whisker, just use your fork! Forks can break the yolk apart and blend the eggs into a thick consistency in no time.
Step 3: Thinly Slice the Salami
For this recipe, I prefer salami and got myself some herb and pepper slices to spice up my dish! Cutting up salami takes but a few minutes. You can stack up the pieces and chop them into thin slices.
If you prefer smaller cubes, hold the slices perpendicular to your knife and start cutting. Soon, you will have a bowl of tiny and thin salami cubes ready for the hot pan!
Step 4: Toast Some Instant Oats
This step is easy. Heat your pan on medium flame and throw in a quarter-cup of instant oats when the pan is hot enough.
Use a spatula to sautee the oats around till they look slightly brown and toasty. Once they are crispy enough, take the pan off the heat and keep the toasted oats in a bowl nearby.
Step 5: Flavour Some Oil in Your Pan
Use that same pan to heat some oil on low heat. You can sprinkle some dried herbs like parsley, and a pinch of chili flakes to flavor this oil. Soon, a beautiful aromatic whiff will engulf your kitchen.
I do not use any chopped garlic or onions in this recipe. But if you like, adding a pinch of dried garlic bread seasoning might pop the scent further and add some tasty notes to your frittata.
Step 6: Toss in Your Veggies and Salami
As the herbs and chili flakes are cackling in the hot oil, drop your chopped veggies and salami bits into the pan. Continue sauteeing them for a minute or more before covering the pan with a lid.
Within three minutes, the salami will start cooking, and the veggies will ooze their juices.
Step 7: Add in Your Toasted Oats
Open the lid and add your toasty oats, and sautee well. Doing so helps the ingredients mix thoroughly, so the flavors get to know each other. Keep the heat at its lowest as this dish tastes best when cooked slowly over the lowest heat.
I then add some pepper and salt and toss the veggies, meat, and oats around before covering the pan for another two minutes.
Step 8: Pour in Your Egg Mixture
After two minutes, coat the oats, veggies, and meat mixture generously with your whisked egg. You can use the pan’s handle to maneuver it around so the egg batter can evenly coat from all sides.
Keep the heat low and cover the pan to let it cook for another four minutes.
Step 9: Flip Your Friatta
Open the lid after four minutes, and use a spatula to cut the crisp edges of your frittata from the pan.
Now cover the pan with a plate and flip it slowly so the frittata falls gently on your dish. You can now add one tbsp of oil to the pan and spread it evenly. Crank up the heat to medium-low, and place the frittata (bottoms up) so the veggies on top can have a crispy finish.
Step 10: Garnish Your Frittata and Enjoy!
Take your frittata off the heat and garnish it with cheese, some coriander leaves, and chili flakes.
Since this is a predominantly savory dish, I like to keep some honey-chilly dip on the side for an added contrasting flavor.

Egg and Salami Frittata with Chilli Honey Dip
Evenings are for relaxing. So today, I am sharing my favourite egg, veggies and salami frittata recipe that makes me feel satiated and happy in no time!

- 3 Tbsp Olive Oil
- 2 Tsp Dried Oregano Seasoning
- 3 Tsp Dried Chilli Flakes
- 1 Tsp Salt
- 1 Tsp Tsp Pepper
- 7-8 Units Coriander Leaves
- 2 Units Eggs
- 1/4th Cup Chopped Carrots
- 1/2 Cup Chopped Cabbages
- 1/2 Cup Toasted Instant Oats
- 1/2 Cup Fresh Peas
- 3 Slices Chicken/Pork Salami
- 1/3rd Cup Grated Cheese
- 3 Tbsp Packaged Honey Chilli Sauce
Dice up and chop your carrots and cabbage leaves into fine pieces. You can add in a handful of fresh peas for some beautiful flavours.
Whisk your eggs as vigourously as possible with a spoon to attain a light-creamy texture
Stack three slices of salami and chop them into fine little cubes.
Heat up your non-stick cookware to medium heat. Once it is hot enough, toss in some instant oat. Sautee till the oats turn brownish.
When heating up your oil for the frittata, sprinkle in some dried parsley seasoning and dried chilli flakes. Keep the oil on low and enjoy the spicy and herby aroma!
Once the flavoured oil has reached peak heat, toss in your chopped veggies and salami. Cover with a lid to cook for around three minutes
Open the lid and toss in your toasted instant oats. Then mix all the componants so that the juices from your veggies soften the oats. Sprinkle in salt and pepper, and cover for another two minutes.
Uncover the pan and pour your egg mixture over the ingredients. Move the pan around so that the whisked eggs coat every morsel of food. Ensure the heat is low, and cover to cook for four minutes
Open the cover and place a plate over the pan. Now flip the pan so that the frittata stays in shape. Up next, add some olive oil to the pan. When it heats up, cook the veggies side for around 2 minutes, covered.
Plate your fresh frittata and garnish with grated cheese, chilli flakes, and coriander leaves. Enjoy your meal!
